Peel, wash and cut the potatoes into regular chips of just a centimetre. Rinse them to remove residues of starch and dry.
Put them in the first basket and start cooking for 15 minutes.
Once cooked, let the chips brown for 15 minutes, turning them over in the meantime, over low heat in the oil and butter mix. They can be cooked either in small amounts in a frying pan or in bigger amounts in the oven.
You can add to the potato a mix of carrots, parsnip or pumpkin. Add a pinch of thyme or mixed herbs while frying.
