Caribbean plantain purée

1/2 a sweet potato (roughly 100g / 3,5oz / 0,22fl)
1/2 a plantain (roughly 100g / 3,5oz / 0,22fl)
20g / 0,7oz / 0,044fl of chicken breast
cooking juices
1 knob of soft butter
1 drop of milk


Preparation time: 10 minutes – Cooking time: 20 minutes

Steam the sweet potato for 20 minutes. After ten minutes, add the finely chopped plantain. After 15 minutes, add the chicken and cook for 5 minutes.

When the cooking is over, put the sweet potato, chicken and plantain into the blender bowl and blend. Loosen the mixture up with a few drops of cooking juices if required.

Add a knob of butter to the warm purée.

Be daring!

You can also use apple instead of plantain.


You can also fry the plantain cut into round slices in a drop of peanut oil.
