Cut the peaches into two and steam cook them (with the skin) for 15 to 20 minutes. The more the fruits are ripe and tender, the less time they will need to cook.
Once they are cooked, put the peaches in the water with the honey and bring to the boil.
Reduce by half and remove the peaches.
Turn off the burner and throw in a few sprigs of lavender flowers. Cover and leave to infuse for a few minutes.
Once they have cooled down, remove the skin from the peaches and take out the lavender.
Put 2 peaches in the bowl of the mixer with a small amount of floral water. Blend.
Finely dice the rest of the peaches and serve with the sauce for the whole family.

If you do not have lavender with flowers, you can use lavender-scented honey.
