Peel and dice the potato small. Start a 12-minute cooking cycle.
Meanwhile, cut a ripe avocado in half using a paring knife. Separate the two halves, remove the pit and scoop out the flesh in small cubes with a spoon.
Blend the chopped parsley with the yoghurt or fromage blanc and the diced avocado in the mixing bowl.
Pour the cold mix into baby’s bowl and sprinkle with the warm diced potato.
As avocado quickly goes brown, mixing it with fromage blanc as soon as you cut it allows it to keep its pretty almond green colour thanks to the lactic acid in the dairy product.
This purée can be followed by steamed apple compote or a portion of blended fruit such as apricot or peach.
